Chicken enchiladas with cheese

Ingredients
500g skinless chicken breast cut into thin strips1cup of red capsicum cut into slices2 cups of a good salsa1/2 cup shredded light cheese6 flour tortillas2tsp Taco seasoning
Directions
Makes 6 enchiladas. 1 each is enough for my partner and I served with oven chips, or some salad.

Preheat oven to 180 degrees celcius (medium heat). Spray an oven dish with some cooking spray or olive oil.

Heat up frying pan or electric wok with some olive oil (spray). Add chicken strips (you can add some garlic for a bit more flavour). Cook until shicken is browned slightly.

Add capsicum strips, salsa and taco seasoning and heat through.

Warm tortillas in the microwave slightly to keep them from breaking when you roll them up.

Add mixture evenly between 6 tortillas in the middle of each and roll up so they are open at each end. (don't worry if some of the mix comes out in the dish). Place each roll in the dish and sprinkle with cheese.

Cook in oven until well browned and crunchy (about 20 - 25min).

    It was ok-- something about the salsa and chicken mixed together tasted odd to me. I think it would be better for my tastes to leave the salsa out as a dipping sauce rather than in the mixture. I'd also add more taco seasoning. - 3/11/08
