Chicken, spinach & white bean stew

Ingredients
2 medium chicken breasts, cut in bite size pieces1 small onion, chopped1/2 cup chopped fresh mushrooms3 cloves garlic, minced1 can great white northern beans1 package frozen spinach1 can diced stewed tomatoes1 tbsp each of parmesan and romano cheesesalt, pepper, red pepper flakes, oregano and basil to taste
Directions
Saute chicken pieces, onions, mushrooms and garlic until chicken is golden brown. Add seasonings, beans (drained and rinsed) tomatoes (undrained) and spinach (defrosted). Bring to simmer. Add cheeses and mix well, simmer for a couple more minutes.

    I left out the mushrooms. I first misread the recipe and though tit called for 1 Tbsp of salt and red pepper flakes!! Glad I reread it correctly. I used about 2 lbs. of chicken, but left the rest of the recipe as is and stretched it to serve 6 - 8/4/08
