Excellent Albondigas Soup

Ingredients
1 lb 93% ground beef1/2 cup long grain rice(the kind that cooks in 20 min)2 cloves garlic1 tsp cumin1/2 tsp salt64 oz chicken broth4 medium carrots, chopped or sliced4 stalks of celery, sliced2 medium onions chopped coarsely14.5 oz can petite diced tomatoes1/2 bunch cilantro, leaves only chopped1 clove garlic1 tsp cumin1 tsp chili powder3 cups loosely packed spinach
Directions
Mix the ground beef, rice, cumin, 2 cloves of garlic and salt together and form medium sized meatballs.

Bring chicken broth to boil and turn down to simmer, add the meatballs and gently simmer for 20 minutes.

Add vegetables, cilantro, cumin, garlic, canned tomatoes....everything except the spinach and gently simmer 30 minutes uncovered.

Add spinach leaves and simmer additional 10 minutes.

Garnish with chopped avacado and sprinkle of cheese.
