Apple and Sweet Potato Hash Browns

Ingredients
1. Cut potato and apples (separately) into thin, matchsticks.2. Heat saute pan with 1T of oil. Add onion and apple. Saute about 4-5 minutes ,until soft. Remove to a covered bowl. 3. Add remaining oil to saute pan, then the potato. Smash lightly with spatula. Flip once browned, about 5-10 minutes. Cook another 5-10 minutes. 4. Add apple and onion. Sprinkle cinnamon. Add salt and pepper to taste.
