Veggie Pasta Sauce

Ingredients
Eggplant, fresh, 1 eggplant, unpeeled (approx 1-1/4 lb (remove)Mushrooms, fresh, 450 gramsOnions, raw, 1 largeZucchini, 350 grams*Tomatoes, 8 medium wholeGreen Peppers, 1 Olive Oil, .25 cup Banana Peppers, .25 cup White Wine, 2 fl oz*Balsamic Vinegar, 4 tbsp Basil, 2 tbsp Oregano, ground, 1 tbspGarlic, 5 clove beans, red kidney, 3 cups prepared (8 oz dried)
Directions
puree tomatoes and set aside
dice the rest of the veggies
saute veggies, with garlic and other seasonings, to desired tenderness
add tomato puree, white wine, and balsamic vinegar
add red kidney beans
let simmer for at least 20 minutes to let the flavors combine
serve over your favorite pasta
