Butternut Squash Pear Soup

Ingredients
Butternut Squash, 3 cup, cubes (1 small squash, peeled/ seeded)Leeks, 2 leek Vegetable Broth, 5 cup Coconut Milk (Lite), 2 cup (1 can)Olive Oil, 1 tbsp Pears, fresh, 2 pear, medium (approx 2-1/2 per lb) Thyme, fresh, 3 tsp
Directions
Saute leek in olive oil.
Add Broth, Squash and Pears. Bring to boil, simmer to tender.
Add can of coconut milk. Ladle into blender (or use immersion blender) and blend to smooth.
Top with fresh Thyme if desired (recommended)
