Mexican Potato Casserole

Ingredients
2 large baking potatoes, peeled and sliced1/2 lb. lean ground beef1 cup green bell pepper, seeded and chopped0.5 cup onion, chopped finely1 cup shredded cheddar cheese, 2%Black pepper, garlic, and cumin to taste
Directions
Preheat oven to 350.

Coat a skillet with cooking spray and heat. Add peppers and onions, cooking until softened.

Add ground beef and cook, stirring often until meat is browned. Season with black pepper, garlic, and cumin powder to your tastes.

Meanwhile, coat a 9x12 baking dish with cooking spray. Layer potato slices to cover the bottom, then top with half of the meat mixture. Layer the rest of potato slices, top with remaining meat mixture, then sprinkle with cheese all over the top of the dish.

Bake for 35 min. or until potatoes are softened and cheese is melted and bubbly.

    This was delicious! I also added taco seasoning to the ground beef for an extra zing and also a can of black beans. Also, be careful with the thickness of your potato slices. I had to bake it a bit longer, as I cut mine too thick. Next time I will slice them thinner! Other than that, it was great! - 8/28/08

    This was ok but I won't make it again. Layers are sparse; used a smaller size pan. It REALLY needs something-- tomatoes w/chilis maybe. Or instead of cheese on top, some sort of cheese sauce mixed in. I used taco seasoning-- the meat & veg part tasted good but potatoes were VERY bland. - 11/2/14
