Cindy's Daikon-Carrot Salad

Ingredients
1 pound daikon radish1 tsp. salt1/2 carrot1-1/2 teaspoons salt1 carrot1 scallion1 tbsp. peanut oil (you can really use any kind of oil)Dressing:2 tsp. sugar2 tsp. cider vinegar1/2 tsp. sesame oil
Directions
Peel and shred daikon (or cut into thin ribbons with veg. peeler). Put in a colander, toss with salt and leave to drain over a bowl for about 1/2 hour. Meanwhile shred carrots and thinly slice the scallion into a large bowl and mix the dressing ingredients in a small dish. After about 1/2 hour, give the daikon shreds a good squeeze to get as much liquid out as possible and toss with the carrot and scallion. Heat peanut oil in microwave for about 30 seconds and toss into the salad.
