Veggie Eggs

Ingredients
2 large fresh eggs, scrambled1/2 cup Kroger mixed bell peppers and onion mix (frozen)a few fresh mushroom slices1 tbsp EV olive oil
Directions
Put olive oil in non-stick skillet on medium high heat. When oil is hot, add pepper and onion mix. Cook about 1 minute then add mushrooms. Cook another 2-3 minutes, then turn down heat to medium and add scrambled eggs. Toss and cook eggs to desired doneness. Plate and eat.
