Sweet Potatoe Souffle

4 cups mashed sweet potatoes1/2 c grandulated sugar1/2 butter or margarine melted2 large eggs1 tsp vanilla2 tblsp cinnamon1 tblsp nutmeg2 tsp gingertopping1/2 c brown sugar packed1/2 c flour1/2 cup chopped pecans1/2 cup melted butter or margarine
spray 13 by 9 inch glass pan with Pam cooking spray.
Cook sweet potatoes and mash using butter or margarine and sugar, crack eggs and whisk together then add to the potatoe mixture, add vanilla, cinnamon, nutmeg and ginger.
Place mixture into glass pan, mix the topping ingredients of 1/2 c brown sugar packed, 1/2 c chopped pecans, and 1/2 c flour in a small bowl, then add 1/2 melted butter or margarine to the ingredients and throughly mix together ( hands are great for getting this done) Then bake at 350 degrees for 45 minutes or until topping is browned and the mixture is bubbling
