Ingredients
Ingredients:*Whole Wheat Flour, 1 cup Old Fashioned Quaker Oatmeal- Plain 1 cup**Flax Seed Meal (ground flax), 8 tbsp (.5 cup)Bob's Red Mill TVP, 0.5 cupOranges, 1 fruit (2-5/8" dia) peeled and choppedCranberries, 2 cup, whole freshUnsweetened Natural Apple Sauce .25 cup Coconut Oil, .25 cup softenedBaking Soda, .25 tsp Baking Powder, 2 tspSalt, 1 tsp *Splenda Sugar Blend for Baking, 1.75 cupsEgg, fresh, 4 large Milk, nonfat (skim milk), .75 cup Breakstone Fat Free Sour Cream,1 cupVanilla Extract, 2 tsp *orange extract, 1 tsp Cinnamon, ground, 1 tspWalnuts, .5 cup, chopped Figs, dried, 4 figs chopped *Sunsweet Plum Amazins (1/4cup)*Orange Zest (1 serving = 1Tbs of orange peel)
Directions
1. Preheat the oven to 350 degrees F (175 degrees C). Grease two 8x4 inch loaf pans. or one 8 x 10 pan
2. In a large bowl, stir together the flour, oatmeal, flax, TVP, baking powder, baking soda, salt, and splenda. Mix in the melted coconut oil until the mixture looks crumbly. Stir in the cranberries, walnuts, figs, amazins and oranges. In a separate bowl or large measuring cup, whisk together the eggs, milk, sour cream, applesauce, vanilla and orange extract, orange zest cinnamon. Pour the liquid ingredients into the bowl with the dry ingredients and stir just until blended. Divide the batter evenly between the prepared pans.
3. Bake in the preheated oven until a toothpick inserted into the crown comes out clean, about 40-65 minutes. Cool in the pans for a while, then remove from the pans and place on wire racks to cool completely.
