Tomato Baked Chicken

6 chicken breast, boneless and skinless1 cup dry quinoa1 1/2 cups water1/2 cup fresh lemon juice2 medium tomatoes, diced 1 tsp lemon pepper1 tsp basil 1 tsp black pepper 3 tablespoons Parmesan cheese
Preheat oven to 325 degrees F. Season chicken breast with lemon pepper, basil, and black pepper. Place chicken on to foil lined baking sheet. Spread diced tomatoes to cover chicken breasts. Top with Parmesan cheese. Bake for 25 minutes, over until chicken is done and juices run clear.
Best to cook quinoa in a rice cooker while chicken is baking. Combine quinoa with water and lemon juice. Cook until done. If using stove, follow directions on package. Lemon juice is added for flavor.
