Vegan Sugar Cookies

Ingredients
1 cup vegan butter1 cup brown sugar2 tsp pure vanilla extract6 tbsp unsweetened almond milk1 tsp vinegar (added to milk and curdled) Pinch of salt1/2 tsp baking soda2 1/2 cups unbleached flourwhite sugar for topping (optional)
Directions
cream butter, sugar, vanilla, and almond milk/vinegar mixture about light and fluffy with beater

Add flour, salt, and baking soda. Beat until mixed.

Place on cookie sheet covered with parchment paper and sprinkle sugar on top. Bake for about fifteen minutes.
