Pumpkin cookies

Ingredients
Dry:1c quick cooking oats1. Almond meal1/4tsp salt1/4tsp baking soda1/4c brown sugar (can use sugar substitute...i didn't have any so I used brown sugar in mine)1 tsp cinnamonWet:1/3c fresh pumpkin cooked and mashed1 tlb Almond Butter (organic)3 egg whites whipped until peaks form1 tlbs honey
Directions
mix all the dry together. If you are using brown sugar make sure to mix by hand so that you can break up the clumps.

mix all the wet ingredients in a separate bowl.

In another bowl mix the egg whites until a peak forms.

Combine the wet ingredients (minus the egg whites) into the dry ingredients and mix well. You can taste the recipe here to see if it is sweet enough for you.)

Then add the mix to the egg whites and mix until well blended.

Place cookies by the tablespoon on a parchment lined cookie sheet and bake for 20 mins at 350.
