Yogurt Marinated Rosemary Chicken

2 cups plain low fat yogurt2 tbsp dried or fresh rosemary (crush the dried, mince the fresh)1 tbsp salt 1 tsp pepper6 boneless skinless chicken breasts no more than one half inch thick (pound or slice in half laterally)2 cups fresh bread crumb that has been toasted golden brown1 tbsp extra virgin olive oil
Place yogurt, rosemary, salt and pepper in a large zip loc bag and combine well. Add chicken, be sure all pieces are throughly coated. Seal bag and refrigerate for 45 minutes. Meanwhile, pre heat oven to 400 degrees. Lightly grease a shallow baking sheet with the olive oil. Remove chicken from marinade, one at a time, and dredge in toasted bread crumb. Lay coated pieces on baking sheet. Bake for 25 minutes, remove and tent with foil for 10 minutes before serving.
