Polynesian Chicken

Ingredients
2 1/2 pounds chicken breast cut up in strips one 14 oz can crushed pinapple in juice1 small (12 oz) jar Apricot preserves
Directions
Preheat oven to 400. Spray rectangular baking pan with non-stick spray. Arrange the chicken strips in pan and spray them lightly with non-stick spray. Bake uncovered for 30 minutes, turn and bake for additional 15 - 20 minutes or until tender. Drain any juice from pan.

Mix the pineapple (With the juice) and preserves. Pour over the drained chicken and bake for 15 - 20 minutes until hot and bubbly.

Makes 4 servings.
