Potato Pancakes - Homemade

Ingredients
3 large raw potatoes, grated2 tbls flour1 large egg, beaten1 tsp saltPam olive oil spray
Directions
Add beaten egg, flour and salt to grated potatoes and mix well. Spray frying pan or electric griddle with olive oil spray. When griddle is hot, add potato mixture by heaping spoonfuls and spread until flat. Fry until browned on each side, approx 5-7 minutes per side.

Serving Size: Makes 12 pancakes, 2 ea per serving
