low carb pumpkin custard

14 oz pureed pumpkin (canned is fine)14 oz coconut milk1/3 cup maple syrup1 tsp cinnamon1 tsp vanilla1 tbs gelatin, unflavored1/4 cup warm water
Grind up almonds and tamp down into the bottom of ramekins to form "crust". Sprinkle gelatin into warm water and allow to soften. Meanwhile heat pumpkin, coconut milk, syrup, vanilla and cinnamon in a sauce pan until almost simmering. Remove from heat and whisk in the soften gelatin (remove it from the water). Pour into prepared ramekins and refrigerate for 4-6 hours. Serve with sweetened whip cream and cinnamon if desired
