Oatmeal Apple Meatloaf

Meatloaf:1 lb extra lean ground beef1 egg1/2 cup chopped onion1/4 cup chopped celery1/4 cup chopped apple1/2 cup cracker crumbs1/2 cup steel cut oats1 cup shredded sharp cheddar cheese2 Tbsp Worcestershire Sauce6 cloves minced garlic1 Tbsp Oregano1 Tbsp Basil1 tsp ThymeGravy:1/4 cup chopped onion1/4 cup chopped celery1/2 cup sliced mushroooms2 cups low sodium beef broth2 Tbsp corn starch
Preheat oven to 350 degrees.
Mix together all "Meatloaf" ingredients in large bowl. Shape into a loaf shape and place on rack in roasting pan.
Insert meat thermometer.
Cook on middle oven rack until thermometer reads 160 degrees (approx. 1-1/2 hours).
Remove from oven and let stand for at least 10-15 minutes before slicing.
In large skillet, lightly saute onions, celery, and mushrooms (just until onions are translucent). Add beef broth and bring to a simmer for approx. 5 minutes. Add 2 Tbsp of corn starch to 2 Tbsp of cold water to create a slurry. Add the slurry to the skillet and stir until colour changes and gravy thickens.
