4 cups shredded carrots (3 large)1 apple, seeded and chopped in small pieces (can use Red Delicious, Gala, Golden Delicious, your favorite crisp apple)1 cup drained pineapple tidbits (or slices cut into small pieces)1/2 cup chopped walnuts2 Tbsp. coconut butter/cream or 2 Tbsp. sour cream
Mix shredded carrots, finely chopped apple, pineapple and walnut. Mix well. Add cream and stir.
