Poached Salmon

Ingredients
2 cup Dry White Wine2 cup Water2 tbsp Rice Wine Vinegar 1 tsp Salt10 Black Peppercorns 10 Coriander Seeds 2 Whole Cloves1 Bay Leaf 1 Clove of GarlicParsley, thyme or tarragon (sprig or 1/2 tsp dried)6 - 4 oz. salmon fillets with skin
Directions
Combine and bring to boil uncovered over high heat in large skillet
Reduce heat and simmer for 5 minutes

While simmering wash and pat dry steaks

Insert into liquid skin side down
Cook 8 minutes
Check for 'doneness' - flesh still clings and fish slightly transluscent
