Lemon Barley Water

Ingredients
Pearl Barley (3/4 cup)Water (1.5L)Rind and juice of 2 lemonsHoney (1/4 cup - to taste)
Directions
Rinse the barley in water until the water runs clear. Place into a saucepan with lemon rind and water. Bring to the boil. Lower heat and simmer for 10 mins. Strain and discard barley. Add honey and stir until dissolved. Add lemon juice and chill in the fridge.
