Tapioca Pudding Homemade

Pearl Tapioca, 0.333 cup Egg, fresh, 2 extra large Milk, 2%, 2.25 cup Granulated Sugar, 0.5 cup Salt, 0.25 tsp
Soak the tapioca for 30 minutes
Add the milk and salt and stir until boiling
Boil for about 5 minutes, then simmer and stir for 10 more minutes while adding the sugar slowly.
Beat the eggs and add some of the hot mixture to the eggs to even out the temperature and avoid curdling.
Then add the eggs to the tapioca mixture and bring just to a boil. Reduce heat and simmer, stirring, for about 10 more minutes.
Cool for 15 minutes, add 1/2 tsp vanilla and serve warm or put in the refrigerator to serve cold.
Serving Size: Makes about 10 1/4 cup servings
