Quinoa Chicken Salad

Ingredients
2 cups quinoa cooked in chicken stock2 skinless chicken breast poached and chopped1 small red onion chopped4 tbsp craisins chopped1/2 cup toasted almond slivers1/4 cup aged balsalmic vinegarSalt and pepper to taste.Mix all ingredients well and place in fridge to cool. This is one of those recipes that the longer it sits the better it tastes!! Enjoy!!
Directions
Poach your chicke breasts in chicken stock until done.
Utilize the stock to poach your rinsed quinoa for 20min.
(rinsing your quinoa allows it to cook faster)
Chop the chicken and onion and craisins
toast your almonds in a dry skillet
Mix all ingredients together with balsalmic vinegar and salt and pepper to taste
