African Groundnut stew

Ingredients
2 cups chopped onions2 Tbsp canola oil1/2 t cayenne (more for spicier)1 tsp pressed garlic2 cup chopped cabbage3 cup cubed skinned sweet potatoes3 cup tomato juice (2 12oz cans)1 cup apple juice1 tsp salt1 tsp grated fresh ginger1 Tbsp fresh cilantro2 chopped tomatoes1/2 cup peanut butter (I use crunchy)
Directions
Saute onions in oil for 10 minutes. Stir in cayenne and garlic and saute for couple more minutes. Add the cabbage and sweet potatoes and saute, covered for several minutes. Mix in juices, salt, ginger, cilantro and tomatoes. Cover and simmer for 15 minutes or so until potatoes are tender. Stir in peanut butter. Simmer gently and serve. Serve with rice.
