Spinach, Bean and Pasta Soup

Ingredients
1 Tbsp olive oil1 spicy or mild Italian or chorizo sausage, crumbled, optional1 onion, diced3 garlic cloves, crushed2 cups water3/4 cup uncooked fusilli or other small pasta1 (14 oz) can tomato sauce1 1/2 cups chicken or vegetable stock1 tsp dried oregano or basil8 cups fresh spinach, washed and coarsely torn or chopped1 (19 oz) can white or red kideny beans, rinsed and drainedFreshly grated Parmesan cheese, for sprinkling (optional)
Directions
In a large pot set over medium heat, heat the oil an saute the sausage until it is no longer pink. Add the onion and garlic and cook for 2-3 minutes, until soft.

Add the water, pasta, tomato sauce, stock, and oregano. Salt and pepper to taste. Bring to boil, reduce heat and simmer for about 15 minutes, until the pasta is tender. Add the spinach and beans and cook for another 3-5 minutes. If it seems too thick, thin it with a little extra stock, tomato juice or water.

Ladle into bowls and sprinkle with Parmesan cheese while it is still hot.

    Made it tonight for a party and got a LOT of compliments. I used the entire package of turkey sausage (1.25 lbs), but other than that I didn't change anything. Very tasty. Will make again. - 1/15/10
