Jennifer's Quinoa Salad

Ingredients
2 Cups Dry Quinoa1 Red Bell Pepper'(chopped)1 Cucumber (pealed and chopped)1 Red Onion (chopped)1 Can Red Kidney Beans (rinsed)1 Can Black Beans (rinsed) 1 Cup Apple Cider Vinegar1/2 cup vegetable oil (or olive oil)Salt/Pepper
Directions
Cook the Quinoa according to the package directions. When the Quinoa is cooled, add the vegetables, beans, and dressing. Season to taste.
