Ingredients
3 large eggs1/2 cup cooked quinoa1/2 cup diced ham1 cup diced or grated potato1/4 cup shredded cheese1/2 teaspoon dijon mustard
Directions
beat eggs and mustard. stir in other ingredients. spray muffin top pan with pam. pour 1/3 cup batter in each well. bake 350 - 15 min
