Eggs in a Basket

Ingredients
12 Slices of Tofurkey (meat-eaters feel free to use turkey or ham)12 large eggsParmesan cheeseGreen onionsFreshly ground black pepper
Directions
Preheat oven to 350. Spray muffin tin with non-stick spray. Place one slice of Tofurkey in each spot. Crack eggs one at a time and put them in Tofurkey basket. Top with 1 tsp green onions, 1 tsp parmesan cheese and ground black pepper. Cook for 15 minutes or until whites are set but yolk is still runny.

Serving Size: Makes 12 egg baskets
