Eggplant Mozzarella Sticks

Ingredients
1 medium eggplant, peeled and cut into long stripsItalian seasoned bread crumbs - 1 cupreduced fat mozzarella slices, cut into strips (2 oz)2 egg whites, beaten slightly
Directions
Take eggplant slices (sticks) and dip into egg whites. Dredge stick into breadcrumbs. Place strip of mozzarella on to of stick. Put on cookie sheet and cook in preheated oven at 350 degrees for 20 minutes. EAT UP!
