Minute Steaks with Flare

Ingredients
8 oz cube/minute steak, lean1 TBL butter2 shots of brandy1/4 C sherry, dry1 TBL yellow or brown mustard2 English Muffins
Directions
Melt butter over medium-high heat. Sear both sides of steak, cooking about 2 minutes per side. Remove pan from heat, pour in 2 shots of Brandy and carefully flame the alcohal off (either with a match or by carefully tipping pan towards burner flame). Cook an additional 1-2 minutes. Whisk sherry and mustard together and pour over steaks and finish cooking until done. Serve on top of a toasted english muffin with sauce from pan.
