Smoky Tomato and Couscous Soup

Daisy Sour Cream Light, 8 tbspCilantro, raw, 8 tbspOlive Oil, 1 tbspOnions, raw, .25 large1 Chipotle Pepper in 1 Tbsp Adobo SauceVegetable Broth, 4 cup28 oz can Red Pack crushed tomatoes, 1 servingCouscous, .75 cup, cooked
Pulse sour cream and cilantro in food processor until smooth; refrigerate.
Heat olive oil and add onion and chipotle chili and cook until softened. Add the broth and tomatoes and bring to a boil for 5 minutes. Add the couscous and cook until al dente, about 8 minutes. Season with salt and pepper.
To serve, top with the sour cream and remaining cilantro leaves.
