Ingredients:Beetroot, 415 gram(s) Coconut, grated, unsweetened, 30 gram(s) Rice Lite Refined Rice Bran Oil Net 1 litre, 10 gram(s) Yellow Mustard, 5 grams *Cumin seed, 1 tsp Black gram dal (Urad dal), 5 gram(s) *Peppers, sweet, red, fresh, 0.3 tbsp Salt, 1 tbsp *asafoetida (hing), 0.5 tsp Curry powder, 1 tsp Toor Dal (Red gram), 5 serving
1) Heat oil, add ingredients for tempering.
2) When mustard seeds splutter, add finely chopped beetroot, salt and 3/4 cup water. Cover pan and cook on high till the vegetables are tender.
3) Add the grated coconut. Mix well.
Serving Size: makes eight 1/2 cup servings.
