Delicious Breakfast Fritata

3/4 cup egg whites 3 whole large eggs1/2 red bell pepper, chopped into bite sized pieces1 cup broccoli slaw (from a bag in the vegetable section at any major grocery store)2 slices butcher shop bacon (can use turkey bacon or fake bacon for less fat)1/4 cup crumbled feta cheesedash of saltfresh ground black pepper to taste
Pre-heat oven to 350 degrees.
Chop bacon. slices into 1/2 inch pieces.
Sauté red pepper and broccoli slaw together with the bacon pieces.
Mix the egg whites and eggs in a bowl and whisk well until frothy. Season with salt and pepper.
Spray a square pyrex dish with Pam or you favourite cooking spray.
Spoon the vegetable and bacon mixture into the bottom of the spayed cooking dish.
Give the egg mixture a final good whisk then pour it over the vegetable/bacon mixture.
Bake in the oven for 30 mins on the middle rack.
Serving Size: 4 (1/4 of the fritata)
