Slow Cooker - Beef Barley Soup

Ingredients
1 medium diced onion4 stalks of diced celery - Keep heads for pot (Optional - I like the added flavor)1/2 cup diced carrots1 Bay Leaf1 can Hunts diced tomatoes4 cups water4 cups chicken broth1 cup uncooked quaker barley1 pound beef chuck / fat trimmedSalt / Pepper to taste1 Bay Leaf
Directions
Turn Slow Cooker on to high setting
Add 4 cups water / can of hunts diced tomatoes with juice
Add 2 cranks of pepper to liquid in slow cooker
Add 4 cranks of sea salt to liquid in slow cooker
Saute16 oz of beef chuck in pan and drain fat from pan
Add 1 Bay Leaf
Dice all vegetables add to liquid in slow cooker
Add celery heads to liquid if desired
Add beef to liquid in slow cooker
Add 1 cup of uncooked barley to soup in slow cooker
Forget it for 2 1/2 hours
Remove celery stalk tops and bay leaf
Serve - Makes 9 one cup servings
