Taco Soup (DF)

Ingredients
1 Tbsp olive oil1/2 cup onions - diced4 cups water or low sodium vegetable broth1 can 14.5 ounce diced tomatoes1 can 15 ounce black beans rinse and drain1 can 15 ounce pinto beans rinse drain and mash1 can 15 ounce corn drain1 1/2 cooked brown rice1 Tbsp Taco Seasoning (see recipe)1 tsp salt1/8 tsp pepper
Directions
Heat olive oil in large sauce pan over med heat.
Cook onions till soft and translucent.
Add water or broth, tomatoes, black beans, pinto beans, corn and rice. Also add the Taco Seasoning , salt and pepper.
Heat to boiling.
Reduce heat and continue to simmer on low heat for 30 minutes.

Serving Size: makes 8 - 1 cup servings
