Cream of Spinach soup

3 cups fresh spinach1/2 cup chopped red onion5 tsp minced garlic - or however much you like!1 med/large potato - no skin, cubed4 cups Campbell's low sodium chicken/beef/veg broth1 cup 1% milksalt and pepper to taste
Saute garlic and onion in a little bit of oil for 2-3 minutes, add in broth and potato cubes, salt and pepper and spinach.
Boil potato until soft.
Let ingredients cool a little and then puree in a blender. Put back in soup pot and add milk, warm on med/high until desired thickness has occured.
