Potato and Chorizo Tortilla

1 tbsp olive oil2 links cured chorizosmoked paprika, to taste1 onion3 medium potatoes12 large eggs1/4 cup white winesalt and pepper to taste
Slice the chorizo in half lengthways and then chop into chunks. Slice the potatoes in half lengthways and slice very finely. Slice the onion.
Heat the olive oil in a large, deep frying pan. Add onions and chorizo and fry until frangrant. Add the potatoes and toss until coated. Cook with lid on, stirring frequently, until tender but not falling apart.
In a bowl, whisk the eggs, wine and seasoning. Pour over the potato mixture and combine.
Cook on a low heat until nearly set (around 30 minutes, depending on your stove). Finish in under the grill. Serve with a tossed salad.
