Garbanzo Curry

Ingredients
Garbanzos, 2 cupsCoconut Oil, 1 tsp Coconut Milk, 1/2 cupThai Red Curry Paste (Thai Kitchen), 1 TbspBell peppers, 1/2 cup, choppedGarlic, 1 cloveGinger Root, 1 tsp, finely choppedKale, 1 cup, chopped Onions, raw, 1 cup, chopped*Bok Choy, shreaded, 1 cup Carrots, 1 cup, chopped *Nakano Seasoned Rice Vinegar, 1 tspCilantro, raw, 2 tbsp, chopped for garnishSalt to taste
Directions
Cook up some rice according to package directions.
Wash and chop all the vegetables.
Saute Oil, Ginger, Curry paste, Garlic, Carrot, Onion, and Bell pepper for 5 minutes.
Add the rest of the vegetables and coconut milk. Simmer another 5 minutes.
Add Garbanzos and rice vinegar. simmer another 5 minutes.
Serve over rice and garnish with cilantro.
