White Rice Peniche/Tuna/Mixed Vegetables (Nici's)

Ingredients
* Bay Leaf, 1 tsp, crumbled (remove) * Olive Oil, 1.5 tbsp (remove) * Onions, raw, 10 slice, thin (remove) * Peniche Rice, 2 cup (remove) * Water, tap, 3 cup (8 fl oz) (remove) * Mixed Vegetables, frozen, 1 package (10 oz) (remove) * Tomato Sauce, 1 cup (remove) * *Bumble Bee Chicken salad kit, .62 serving (remove) * starkist chunk light Tuna in water (2 oz), 2 serving (remove) * *Knorr Chicken Bouillon, 3 tsp (remove)
Directions
1. Heat oil in large nonstick skillet.

2. Saute onions over moderate heat 2 minutes.

3. Add water and bring water and stock to a boil in medium-size saucepan.

4. Add rice and stir and the rest of the ingredients mix well. Cover and simmer 20 minutes.

5. Remove pan from heat. Let stand, covered, 5 minutes.

6. Fluff with fork before serving.

Yield: 24 servings--Serving Size: 1/2 cup
