Mom's Egg Muffins

Ingredients
10-12 eggs1 green onion1 cup zucchini8 slices bacon1 cup roasted red pepper4 cups fresh spinachblack pepper to taste
Directions
1. preheat oven to 350, wisk eggs
2. grease muffin pans with coconut oil
3. put onion, zucchini, bacon, and peppers in food processor- chop
4. add veggies to eggs- sprinkle with black pepper
5. put spinach into food processor- finely chop- add to eggs
6. Mix well
7. Fill muffin cups with 1/4 cup egg mixture
8. bake 20-25 min
