1 15 oz can sweet potato puree1 13 oz can Native Forest Classic coconut milk2 eggs, lightly beaten1 tsp nutmeg1/4 tsp gingerButter to coat ramekins
Preheat oven to 425F. Mix all ingredients but eggs. Use stevia to taste - 3 droppers makes a moderately sweet dessert. Add eggs after tasting. Wipe inside edge of ramekins with butter to prevent top edge from sticking. Place in water bath. Bake for 15 minutes, then turn oven down to 350F and bake an additional 45 minutes.
