Tzatziki

Ingredients
1 16 oz container greek yogurt, plain6 garlic cloves minced1 large peeled cucumber, grated1/2 tsp dried dill weed1/2 tsp dried basilsalt/pepper to taste
Directions
Grate cucumber, and remove all excess liquid by squeezing handfulls of the grated cucumber until it is mostly dry.

Place a coffee filter or a paper towel in a collander and drain the yogurt for 10 - 15 minutes to remove excess liquid.

Place the yogurt in a bowl and add cucumber and all remaining ingredients. Mix thoroughly. Add more dill, basil, salt/pepper to taste.

Makes 16 1/4-cup servings
