Ham and Cauliflower Soup

Ingredients
Margarine butter blend, 60% corn oil margarine and 40% butter, 1 tsp Onions, raw, 1 cup, chopped Garlic, 1 clove Water, tap, 1 cup (8 fl oz) Chicken Broth, 2 cup (8 fl oz)Potato, skinned and diced. 2 medium (2-1/4" to 3-1/4" dia.) Cauliflower, raw, 2 cupHam, regular (11% fat), 1 cup, dicedMilk, nonfat (skim milk), 1 cup (devided)Fresh Chives, 1 tbsp choppedPepper, white, .25 tbsp Nutmeg, ground, .25 tbsp Flour, white, 2 tbsp
Directions
Melt margarine in pot. add onions and garlic; cook till tender. Add water, broth, cauliflower and potatoes. Bring to a boil then reduce heat. Simmer till tender, about 15 minutes. Stir in ham, 1/2 cup of milk, chives, white pepper and Nutmeg. Combine the remaining 1/2 milk and 2 tablespoons of flour, blend well and add to the soup, stir until slightly thickened.

Serving Size: Makes a pot of soup
