Mom's make ahead breakfast casserole

8 slices whole wheat bread, stale works well or toast lightly32 ounces Bob Evans original pork sausage, (cooked and drained yields 24 ounces)2 cups shredded cheese2 cups milk8 large eggs
Cut crusts off bread if desired and cut or tear into bite size pieces. Spray a 13 x 9 casserole and place bread in bottom. Sprinkle half the cheese. Spread the cooked and drained sausage over bread. Beat eggs and milk and pour over mixture. Sprinkle remainder of cheese on top. Can be seasoned with Salt and pepper to taste. I also add a few spices. You can cover and refrigerate over night at this point or make sure all bread is soaked and then bake at 350 for 35 minutes.
