Brazillian Beans and Rice

1lb dry black beans1 medium onion, chopped1lb polska kielbasa smoked sausage, sliced6oz tomato paste1tbsp garlic powder (or 1 clove fresh garlic, minced)2 cups white rice, cookedSalt and pepper to taste
* Soak beans overnight and drain.
* In a large, deep pan, add the beans and cover with water. Add onion, garlic, salt and pepper. Cook until beans are soft. Add water if needed. When beans are cooked there should be just enough water to cover them.
* In a large skillet brown the polska kielbasa sausage and drain any excess fat.
* When beans are cooked add the tomato paste and sausage. Cook additional 15-20 minutes.
* Meanwhile, cook the rice in a separate pan. Once cooked, add to the bean and sausage mixture and stir well.
Serving Size: Makes 8 1 cup sevings
