Real Italian Spaghetti Sauce

1 T. Extra Virgin Olive Oil1 med. Onion chopped3 cloves Garlic chopped1 sm. can Tomato Paste1 lg. can Crushed Tomatoes1 T. Salt1 t. Black Pepper1/8 - 1/4 c. Sugar10 - 15 leaves Fresh Basil
In a large, deep pan or skillet heat the extra virgin olive oil. Add onions and sautee until they become translucent. Add garlic, making sure to stir often to avoid burning.
Next, add the crushed tomatoes and tomato paste. Stir in salt and pepper, turn the burner to low heat, and let the sauce heat through.
Once the sauce is bubbling, add enough sugar to cut the bitterness out of the taste. Approximately five minutes before you're ready to serve, tear up the basil leaves and stir them into the sauce.
This makes 10 - 15 1/2 c. servings.
