Low-Carb Slow Cooker Pot Roast

1 arm pot roast, about 3.5 lbs3 carrots, chopped in large chunks3 stalks celery, chopped in large chunks1 box of beef stock (about 3 cups) 1 envelope onion soup mix
Line the slow cooker with a liner or spray with cooking spray. Lay vegetables in first on the bottom of the slow cooker. Lay roast on top of vegetables. In separate bowl, mix beef stock and soup mix. Pour the mixture over the top. Add water if more liquid is needed. Cook 8-10 hours in slow cooker.
