Meatloaf Muffins - Gluten free

1 pound of 80/20 ground beef1 large egg1/2 cup of dry gluten free oatmeal, put this into a blender and whiz until it more resembles cornmeal4 TB. finely chopped onion1/2 tsp. onion powder1/2 tsp. black pepper2 TB. ketchup1/2 tsp. seasoned salt
Preheat oven to 350 degrees. Prepare a 6 cup muffin tin with nonstick spray.
Place all ingredients ( remember to blend the oatmeal into powder ) in a medium sized bowl and mix thoroughly. Divide the meatloaf evenly into the muffin cups and mound up if necessary. Sprinkle the tops with a little salt and pepper. Bake until done, 30-45 minutes.
Serving Size: Makes 6 meatloaf muffins. One muffin is one serving
