Vegetable Turkey Skillet

Ingredients
1 Lb Turkey, ground2 Tbsp Oil, Sunflower or Canola1/2 C Onion, chopped1 C Carrot, chopped1/4 C Celery, chopped15 oz Tomatoes, diced (can)2-3 C Water1 C Green Beans1 C Lima Beans1 C Corn1 C Cauliflower, chopped1 C Broccoli, chopped1 C Zucchini, chopped1-1/2 C Cabbage, chopped2 C Vegetable Juice (like V8)1 Tbsp Parsley, dried1 Tsp Sage rubbed2 Tsp Paprika hot or sweet2 Tsp Oregano, dried1 Tsp Garlic powder1 Tsp Black Pepper1 Tsp Salt
Directions
Brown TURKEY in pot, remove to bowl. Add OIL to pot then ONION, CARROTS, CELERY, saute, stirring until onion is soft. Add TOMATOES and WATER, scraping bottom of pot. When liquid is hot add remaining ingredients and reserved TURKEY. Add more WATER if needed to almost cover ingredients. Cover and simmer 20 minutes or until vegetable are desired tenderness. Adjust seasonings.

Serve hot over noodles or rice, if desired.
